It’s officially fall, and I couldn’t be more excited! Fall is my favorite time of year—crunchy leaves, beautiful colors, pumpkin spice everything and the winding down of our gardens. It’s all so cozy and comforting!


If you’re like me, you may have a zucchini or two sitting on your counter, waiting for inspiration. I get it—sometimes we just don’t know what to do with another zucchini! Well, I’m here to help you out.


A Family Favorite: Homemade Zucchini Bread

A family favorite around here is my homemade zucchini bread. The freshly grated zucchini combined with the cinnamon makes the whole house smell delicious. Our kids love to dunk it in a cup of milk, making it an excellent breakfast treat. While it’s not the healthiest recipe, I only make this in the fall. Every once in a while we need a treat, right?

Easy Homemade Zucchini Bread Recipe

Here’s the simple recipe for my homemade zucchini bread, perfect for using up those leftover zucchinis and bringing a taste of fall into your home.


Ingredients:

  • 3 Eggs (beaten)

  • 1 C. Oil

  • 1 tsp. Vanilla

  • 1 tsp. Salt

  • 1 tsp. Baking Powder

  • 1 tsp. Baking Soda

  • 1 tsp. Cinnamon

  • 2 C. Sugar

  • 3 C. Flour

  • 2 C. Grated Zucchini


Directions:

  1. Preheat your oven to 350°F.

  2. In a large bowl, mix all the ingredients well, but be careful not to overmix. The batter will be thick and slightly lumpy.

  3. Grease 2 bread loaf pans.

  4. Pour the batter evenly into the pans and bake for about 1 hour, or until a toothpick comes out clean.

  5. Enjoy!
