Easy Back-to-School Breakfast Ideas

Where did summer go? School is already in session for some of you, but our kids don’t start until September 8th this year. We love summer in our family, so this time of year is always a little bit bittersweet. I’m the mom who always cries the first day of school. Anyone else?


Regardless of my feelings on this matter, I always handle it a little bit better if I feel organized. I’m a terrible meal planner in the summer, but most of the time I do a decent job during the school year. With 3 kids involved in different activities, being prepared brings me so much peace!


So, this morning I whipped up 15 frozen breakfasts in about 40 minutes and stuck them in our freezer! I can hear you all cheering from here. Haha! Both the breakfast burritos and the egg cups were simple, quick and a great way to use the abundance of eggs from our sweet hens. You will find the recipes below.


Small disclaimer: I’m not a professional chef or photographer (if you haven’t figured that out by now!). I’m a regular wife and mom who just wants to do the best I can for our family. Some days it may look easy, but others I crumble just like anyone else. Doing your best for your family will more than likely NOT look like other families. Don’t sweat it. Make your plan and be thankful for the family that God has given you. Remember the famous saying by Gretchen Rubin, “The days are long, but the years are short.” Oh how true this is!

Easy Egg Cups

Ingredients

  • 12 eggs

  • Breakfast sausage (I used fully cooked turkey sausage crumbles)

  • Bacon Pieces

  • Shredded Cheese of your choice

  • Any veggies you’d like to add (peppers, onion, spinach, tomato)



Preheat oven to 350 degrees.

Blend eggs together well. Pour into GREASED muffin pan. Fill each “cup” about half full with the eggs. Sprinkle the sausage, bacon, veggies into each cup. Top with shredded cheese. Bake for 10-12 minutes. Enjoy!

**I placed 2 cups into small freezer bags for an easy to grab breakfast.


Frozen Breakfast Burritos

Ingredients

  • 12-18 Eggs

  • 8 soft shell wraps

  • Breakfast sausage (I used fully cooked turkey sausage crumbles)

  • Bacon Pieces

  • Shredded Cheese of your choice

  • Veggies of your choice

  • Hot sauce if desired

  • Salt/pepper to taste



Scramble your eggs and cook over medium heat in a frying pan. Add in your precooked sausage, bacon and veggies. When the eggs are almost cooked, add in shredded cheese and hot sauce. Stir well. Fill your burrito shells with about ⅓ cup of egg mixutre. Roll them up!


** I wrapped my burritos in a paper towel and then tin foil and placed them in a freezer bag. This will prevent freezer burn, but I doubt they will be in the freezer long enough to even worry about that!

To reheat: Remove from freezer bag and tinfoil. Microwave for 2 -3 minutes. Let sit for a minute before enjoying! If you put one in the fridge the night before to thaw, reduce your microwave cooking time to 2 minutes.

Raising our family is one of the greatest joys of my life. Hopefully your school year is off to a great start. In the midst of our crazy world right now, we can still enjoy the steadiness of family.
