Irish Taco Recipe

You guys are going to want to get your grocery lists out! I’m serious. I just made some incredible Irish tacos and you’re going to want to make them too! I was testing the recipe (or my spin of a recipe anyway!) for St. Patrick’s Day. I’m not even Irish but thought it would be fun to try something new.


I ended up eating two tacos for lunch! They were delicious. And now I’m going to make them for supper tonight too. If you wanted something fun and different for St. Patty’s Day for your family, this is it.


And the bonus part? Any leftovers can go right out to your chickens! However, I doubt there will be any leftovers.


My favorite recipes are ones that are minimal ingredients, few steps, and so good! I’m not one to do multiple step recipes, so if you’re like me, this meal is for you!


Annie’s Irish Tacos

Prep Time: 10 Minutes Cook Time: 10 Minutes


Ingredients:

  • 3 Packages Corned Beef

  • 1 Bag of Coleslaw Cabbage Mix

  • Sriracha Mayo (you can make this yourself or buy it already done!)

  • Cilantro

  • Small Tortilla Shells (I used the low carb tortillas)

  • Salt and Pepper to Taste

  • 1-2 Limes

  • Pico de Gio (Optional. I didn’t use it on mine and they were amazing.)


Directions:

Mix the coleslaw mix with the sriracha mayo to taste. Salt and pepper as needed. Lightly brown the tortillas so they're warm. Slice the corned beef and lightly brown. Layer the corned beef and then the cabbage slaw. Top with cilantro, pico and a squeeze of lime. Enjoy!
