An Easy High-Protein Crockpot Breakfast Soup Recipe I Didn’t Expect to Love

When the temperatures drop here in Minnesota, my family instantly switches into soup mode. But breakfast soup? I’ll admit, when someone challenged me to make a crockpot breakfast soup, my first reaction was, “That can’t be good.”


I’m happy to report I was very wrong!


This recipe turned out to be one of the easiest crockpot soups I’ve ever made. Throw it together the night before, wake up to a hearty, warm breakfast that tastes like a hug!


It’s packed with potatoes, sausage, bacon, tomatoes and topped with fresh scrambled eggs. Perfect for chilly fall and winter mornings when everyone needs something warm and filling before heading outside for chores, work or school.


And the best part? It’s fully customizable, add onions, peppers or even spinach if your crew wants extra veggies.


Ingredients

(Serves 6–8)

  • 3 cups diced potatoes

  • 15 oz canned diced tomatoes (don’t drain!)

  • 6 cups chicken broth

  • 2 cloves garlic, minced

  • 1 lb. sliced breakfast sausage (frozen works great!)

  • ½–1 cup cooked bacon pieces

  • 1 packet Hollandaise sauce mix

    • Or substitute with salt, pepper and a pinch of cayenne pepper

  • 4 scrambled eggs (for topping)


Directions

  1. Dice potatoes and add to your crockpot.

  2. Add tomatoes, sausage and bacon.

  3. In a separate bowl, whisk together chicken broth, garlic and hollandaise mix. Pour over ingredients.

  4. Cook:

    • High: 4 hours

    • Low: 8 hours or overnight

  5. When ready to serve, scramble fresh eggs and spoon them on top of each bowl.

  6. Serve with sourdough or your favorite crusty bread.
