Ingredients for a Florentine Omelette
5 whole eggs
2 Tbsp butter
3 cups spinach
Salt and pepper to taste
1 Tbsp chopped onion
1 clove garlic, minced
½ to 1 cup cheese of your choice

Sautéed tomatoes
Greek olives
Mushrooms
How to Make a Florentine Omelette Step by Step
Melt 1 tablespoon of butter in a skillet over medium heat. Add the onion and garlic, and cook until soft.
Add the spinach to the skillet and cover until wilted. Remove from heat and set aside.
Crack the eggs into a bowl and whisk until foamy.
Melt the remaining 1 tablespoon of butter in a greased skillet over medium heat.
Pour in the eggs. As they begin to set, use a silicone spatula to gently push the cooked edges toward the center while tilting the pan so the uncooked egg can flow underneath.
Continue working around the pan until the omelette is almost set, about 45 seconds.
Add the spinach mixture and cheese to one half of the omelette.
Fold the other half over the filling.
Turn off the heat, cover the skillet and let it sit for 1 minute so the cheese can melt.
Carefully slide onto a plate and enjoy.
