Labor Day is the unofficial last hurrah of summer and the best way to cap it off is a backyard cookout with a crowd-pleasing dessert that feels a little fancy without actually being hard! Enter: the chocolate lava cake.
These individual molten chocolate cakes are warm, gooey and completely irresistible. The best part? They’re made in single-serving ramekins, so everyone gets their own little moment of chocolatey magic. No sharing required!
Here’s a little bonus for our fellow backyard flock keepers. Those eggs you collected this morning from your hens are the secret weapon in this recipe! Fresh eggs from well-cared-for hens have richer yolks and better structure, which means better baking. Your girls are basically co-chefs!
Lava Cake Recipe
Makes 4 individual lava cakes.
Ingredients:
· 4 oz (113g) semi-sweet or dark chocolate chips or baking chocolate
· ½ cup (1 stick) unsalted butter
· 1 cup powdered sugar
· 2 whole eggs + 2 egg yolks (fresh from your flock!)
· 2 teaspoons vanilla extract
· 6 tablespoons all-purpose flour
· Pinch of salt
· Butter and cocoa powder for greasing ramekins
Equipment:
4 oven-safe ramekins (6 oz size works perfectly)
Mixing bowls
Whisk or hand mixer
Baking sheet
Optional Serving Suggestions
A scoop of vanilla bean ice cream
Fresh blueberries, blackberries, raspberries or strawberries
A light dusting of powdered sugar
Whipped cream with a sprig of fresh mint
Step-by-Step Instructions
The jiggle test is your friend. When you pull the ramekins out of the oven, give them a gentle shake. The outer edge should look fully set while the center wobbles slightly, like a just-set Jell-O. If the whole thing jiggles, give it another minute.
Don’t overbake. This is the most common mistake. A minute or two too long and you lose the molten center. Set a timer and trust it.
Make ahead magic. You can prep the batter and fill the ramekins up to a day in advance. Store them covered in the fridge, then bake straight from cold. Just add 1–2 extra minutes to the bake time.
Use good chocolate. Since chocolate is the star of this recipe, quality matters. Aim for at least 60% cacao for a rich, deep flavor.
