The Juiciest Chicken Legs of Your Life

Our secret for fall-off-the-bone drumsticks, oven or grill, it works every time and is perfect for a 4th of July cookout.
We believe great chicken starts with quality, but the real magic happens in how you cook it. After years of perfecting our drumsticks, we’re sharing the one secret that separates a so-so chicken leg from one that makes your guests go quiet mid-bite.
The Secret is Out
Here is our secret. Cook your chicken legs to 185°F - 195°F degrees internal temperature and let them rest before serving. (Don’t skip this step!) Most recipes stop at 165°F, but dark meat is different. At 190°F, the collagen in the drumstick breaks down into rich, silky gelatin. That’s what makes them incredibly juicy and fall-off-the-bone tender. Then resting seals it all in.
Our favorite rub recipe comes from The Recipe Teacher. Simple pantry staples and our quality drumsticks are all it takes. This recipe serves 2–3 people, so double or triple it to feed your whole 4th of July crew.
What You’ll Need
6 Chicken Legs
2 tsp paprika
1.5 tsp kosher salt
1 tsp onion powder
1 tsp garlic powder
1 tsp dried rosemary
1 tsp parsley flakes
½ tsp black pepper
½ tsp ground mustard
1 tbsp olive oil
How to Make Them
Whether you’re working the grill outside or using the oven indoors, the method is the same. The secret’s in the temperature, not the equipment.
Step 1: Preheat your oven to 425°F (or heat your grill to medium-high). Pat the chicken legs dry with a paper towel and trim any excess skin.
Step 2: Mix all the dry seasonings together in a small bowl. Place the chicken legs in a large zip-top bag, add the olive oil, seal and shake to coat everything evenly.
Step 3: Open the bag, pour in the seasoning blend, seal again and shake. Massage it in so every inch of the drumstick is well covered.
Step 4: Oven: Line a baking sheet with foil, spray with non-stick spray, and lay the legs on the middle rack. Bake for 40 minutes, turning once halfway through. OR, Grill: Place legs over indirect heat, cover and cook 35–45 minutes, turning occasionally. Finish over direct heat for 3–4 minutes to crisp the skin. Check the internal temperature with an instant-read thermometer. You're aiming for 190°F. This is the sweet spot for maximum juiciness.
Step 5: Let them rest for 5 minutes before serving. This step is non-negotiable. It lets the juices redistribute throughout the meat.
Want to Add Some Heat?
Add ½ tsp cayenne pepper and swap regular paprika for smoked paprika. You can also double or triple the recipe without changing the cook time, just keep the legs in a single layer and don't let them touch.
