Tomorrow is Thanksgiving! I’ve always loved this holiday, there’s something special about slowing down, gathering with family and friends and soaking up that feeling of gratitude.


Recently, we had a friend visiting from South Africa who was excited for his very first Thanksgiving dinner… until he realized his flight home was three days before the holiday. So, we did what any good Minnesota host would do, we cooked a full Thanksgiving meal early!


And because stuffing almost never survives in our house, I made extra. That turned out to be the best idea because this new Leftover Stuffing Breakfast Bake recipe was born from not wanting a single scoop of stuffing to go to waste. It’s hearty, cozy and has the kind of rich flavor that makes everyone ask for seconds. My family even asked if this could be the new normal!

Leftover Stuffing Breakfast Bake Recipe


Ingredients

  • 6 eggs

  • 1 ½ cups milk

  • 1 tsp dry mustard

  • Salt and pepper

  • 3 cups leftover stuffing

  • 2–3 cups shredded cheese

  • 1 lb. cooked and crumbled breakfast sausage


Directions

  1. Preheat oven to 350°F. Grease an 8x8 pan (double the recipe for 9x13).

  2. Brown the breakfast sausage.

  3. In a bowl, whisk together eggs, milk, mustard, salt and pepper.

  4. Spread leftover stuffing into the bottom of the pan.

  5. Layer cooked sausage over the stuffing.

  6. Pour the egg mixture on top.

  7. Add shredded cheese.

  8. Cover and bake for 1 hour.

  9. Uncover and bake 10–15 more minutes, until the center no longer jiggles.

  10. Let rest 5–10 minutes before serving.


Quick, No-Prep Holiday Breakfast

This isn’t one of those egg bakes that needs to sit overnight, actually, letting it sit makes the stuffing soggy. This is a true 10-minute prep recipe you can toss together right after Thanksgiving or anytime you have stuffing in the fridge.


Needless to say… we had zero leftovers.
