Hello October! It’s pretty gorgeous here in Southwest Minnesota. We love autumn and all that goes with it! That includes football season. Our boys both play and they are enjoying an unusually warm season.
Quick and Easy Suppers for Busy Families
If you’re anything like me, figuring out simple, healthy suppers for a growing family can be a challenge—especially during football season! While I’m no professional chef (and definitely not super organized!), I love whipping up something fun in the kitchen. After our youngest son’s football game tonight, I made these delicious sliders, and they were a hit! I’ll definitely be making them again.
Easy Ham and Egg Sliders
Ingredients:
12 Hawaiian dinner rolls
Shaved smoked ham
Sliced cheddar cheese
8 eggs
2-3 Tbsp milk
Salt
Pepper
Mayo
1 Tbsp powdered or Dijon mustard
1 tsp Worcestershire sauce
Everything but the Bagel Seasoning (EBTB)
¼ Cup + 1 Tbsp butter
Directions:
Preheat the oven to 350°F and lightly spray the bottom of a 9x13 pan.
Using a serrated knife, slice the Hawaiian rolls horizontally to create a top and bottom section. Keep the rolls intact—don’t pull them apart!
Lightly spread mayo on both the top and bottom sections of the rolls.
Layer the ham on the bottom section of the rolls.
In a bowl, whisk together eggs, milk, salt and pepper. Melt 1 Tbsp of butter in a hot frying pan, then scramble the eggs until they’re cooked but still slightly wet. (They’ll finish cooking in the oven.) Layer the scrambled eggs on top of the ham.
Add sliced cheddar cheese over the eggs, then carefully place the tops of the rolls over the cheese.
In a separate bowl, melt ¼ cup butter and mix in Worcestershire sauce and powdered mustard. Lightly pour and brush this mixture over the tops of the rolls. Sprinkle with Everything but the Bagel Seasoning.
Cover the pan with foil and bake for 12-15 minutes, until the sliders are warmed through and the cheese is melted.

This recipe may make it into our normal meal rotation! It was so incredibly easy and absolutely delicious! And it was football player approved. I served it with some mixed berries and a side of bacon to round it out.
